No Flour Or Sugar Cookies

I have had this recipe for some time and sorta resisted trying them. I tried them last night and let me tell you they were very very good! They had a mild chewiness – I did not add rains to half of this batch and both were very good! You would think since these are made with banana that it would taste like banana – but it only carried a minor flavor of banana. You can make them with whole milk instead of almond milk and you can cut the cinnamon in half or eliminate it all together. I added 1/4 cup dark chocolate chips to half this recipe and they came out perfect. I imagine you could substitute all or part of the raisins with chopped nut or dried cranberries. I highly recommend this recipe!

Ham & Egg Breakfast Cups

bacon egg breakfastThese are very good and are actually very easy to make, and you can make several at a time. Use thick cut ham luncheon meat and place in non-stick sprayed cupcake pan.  Push the ham down into the cupcake well. Add scrambled egg and chives and cheese to taste (you can also add onion, bell pepper, peppers such as jalapeno). Bake at 350 for 5-7 minutes  or until you can push a fork into the egg and have it come out with no wetness. Serve immediately.

Boil Bacon In WATER?

bacon boil water fry cook healthy country and victorian timesFirst place the bacon in a fry pan filled with water with just enough water to cover the bacon. Then place the pan on the burner (at high temperature) and let it cook. Cook it till it snaps and hisses at you and then reduce the burner to medium. The water cooking allows it to be fully cooked without browning so there will be  no burnt outside and it will still be chewy inside.

On a side note after you see the bacon shrink a bit you can wash the pan and bacon and then put bacon back in the pan to continue to cook. This way you will loose some of the grease and bacon will be a little healthier to eat. You can also do this with ground hamburger that will be seasoned.
