Nutella Banana Nut Bread

Banana Bread Recipe

Ingredients

  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour
  • 4 tablespoons Nutella

Method

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour and mix stirring in Nutella. More or less Nutella can be used and small adjustments to cooking times may need to be made. This amount of Nutella makes the bread darker and and gives the bread the aroma and slight taste of Nutella. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour 15minutes (done when a fork can be pressed down through middle and no batter substance sticks to the fork. Cool on a rack. Remove from pan and slice to serve.

Yield: Makes one loaf.

Piggy Bisquits

Makes about 20 piglets:
Dough:
400 g (13 1/2 oz) all purpose flour
1 package instant dry yeast
1 egg
2 dcl (7 oz) plain yogurt
1 dcl (3 1/2 oz) warm milk
a pinch of salt
Puffed or flaky dough:
150 g (5 1/2 oz)flour
100 g (3 1/2 oz)magarine (unsalted)
pinch of salt
Filling:
As much as you like: cheese(she used Gouda), tomato (pizza) sauce, oregano;
or something else you would like for filling
Wash:
Egg white to use as «adhesive»
Egg yolk and some milk to brush @ the end

First, make first dough by mixing all ingrediens, and let it rise in a warm place. In the meantime, make puff dough with second batch of ingredients, and then mix it into the risen dough (yes, mix’em together), and work it well on a floured surface. Roll the dough and with a round cookie cutter or something else cut out circles about 3 inches in diametar or desired size. Leave some dough for ears and noses 🙂

Make filling with cheese, tomato sauce (pizza sauce), and oregano. You can be creative and use different kinds of ingredients to make a filling of your own. You can also add ham, or salami, or vegetables.

Place half of circles onto baking sheet (aligned with parchment paper), brush edges with egg white wash. Put some filling in the middle, cover with other half of circles, and press the edges to assure nothing will come out while baking.

Remainder of the dough use to make smaller circles for nose, and for ears by cutting them into quarters. Use egg whites wash as «adhesive» for ears and nose. For nose make somewhat smaller circles. For eyes and nostrils use a toothpick to make little lines and then inside, put cumin, pepper or something similar.

Now that you have little piglets, let them rise again for a little while, and then brush them with a little bit of egg yolk wash mixed with a little bit of milk. Bake for about 20-25 min. @ about 385-405 F.

Easter eggs:
1. Boil eggs.
2. Crack shell by tapping it lightly against hard surface. Make sure you do not crack it too hard as desired effect will not happen.
3. Dip in colored water (food color). Keep submerged for twice the time the instructions say to allow the egg to take coloring inside the egg.
4. Peel shell off and serve or serve as they are and let your guests find the surprise inside.

New Years Eve Fun

Whether you and your family view New Year’s Eve as a time for reflection or as an opportunity to have a huge party, it is a date steeped deep in traditions. This year, invite your clan to start a new first night ritual. Here are some ideas to get your creativity started:

1: Make and frame a photo collage of the past year’s events….. A poster sized frame can be obtained and everyone can have a hand in helping create a masterpiece to display all year around in an entryway, hallway or nook.

2: Deliver a plate of home made goodies to a neighbor… a great time to say hello and to keep up with current happenings in each home so that the other has ideas of what is happening at each others homes…. safety is always a big concern for all of us and if a neighbor knows some of what is happening in your home they know what to look for and vise-versa.

3:Make something old – new again: glue images cut from your old postcards/Holiday cards your family received onto postcard-sized pieces of posterboard or index cards, add a wish for the new year…. and mail them off to those you love.

4:Cover they floor with bubble wrap…. and have the family stomp their way into a new year…. while you start off that resolution to be more energetic and shed the extra pounds.
