Cranberries give mild rice vinegar a snap that celebrates salads.

Very berry, very red vinegar

Splash the vinegar over salad greens, orange slices, raw or cooked red cabbage, and turkey salad.

Cranberry Vinegar
2   cups fresh or frozen cranberries, rinsed
3   cups rice vinegar
About 3 tablespoons sugar

In a 2- to 3-quart pan on high heat, bring to boiling cranberries, vinegar, and 3 tablespoons sugar. Simmer, covered, until cranberries pop and are soft, about 5 minutes. Add more sugar to taste, if desired. Let stand until cool. Pour vinegar through a fine strainer into a container with a pouring lip; discard residue. Pour vinegar into decorative bottles, using a funnel if necks are narrow. Seal with lids.
Use, or store at room temperature up to 4 months. If an opaque film de­velops on surface, spoon it off or, to preserve clarity of vinegar, pour vin­egar through a fine strainer into a 2-to 3-quart pan and bring to boiling. Wash bottle, then refill with vinegar. Store as before. Makes about 3 cups.

Hammy Whammy Sandwiches

*Bakery-fresh sourdough bread, sliced and spread with
*Herbed Mayonnaise: Pizza seasonings (e.g., basil, oregano, thyme)
*Fresh herbs (e.g. cilantro, parsley), salt, pepper, and red chile pepper flakes to taste
*(Combine and refrigerate overnight to blend flavors)
*Stack:
*Thin slices of honey-glazed ham
*goat-cheese blend or your favorite goat-cheese spread Cambozola bleu cheese; Thin slices of green apples,
*Crisp Romaine lettuce leaves and Fresh spinach leaves

Quick & Simple Shrimp Marinade

1 stick butter 1/2 cup lemon juice
garlic powder salt & pepper
about 2-3 pounds of large raw shrimp
Peel the shrimp, leaving the tail on. Devein, wash, & drain the shrimp.
Place drained shrimp in marinade for 2 hours. Grill over hot coals till
pink. Turn over and grill the other side for 4-5 minutes longer. (Do not
over cook the shrimp.)

Garlic Chicken Grilled

1 envelope Recipe Secrets garlic and mushroom soup mix
3 tablespoons olive oil 4 boneless chicken breasts
Stir together soup mix and oil. Toss chicken pieces in to coat. Let set
till ready to grill, flavors will mix. Place chicken pieces away from direct
heat, or it will brown and not be done. Enjoy!!!

Southwest Bean and Corn Salad

1 can Red beans, drained 1 can Great Northern beans, drained
1 can Black beans, drained 1 can corn, drained
1 small red onion chopped (or 4-5 green onions)
1 green or red pepper (or both), chopped
In a bowl combine all the beans with corn and peppers. Mix well and set
aside. In a small bowl, whisk together the following:
1/3 cup oil 1/4 cup tomato salsa
2-3 tablespoons cider vinegar 2 cloves garlic, minced
1/2 teaspoon ground cumin salt & pepper to taste
1/2 cup cilantro, chopped (for garnish)
Pour dressing mixture over the bean mixture , mix well. Let stand at least
30 minutes to allow the flavors to blend. Just before serving, garnish with
the cilantro.
NOTE: is is so good with BBQ, hamburgers, hotdogs or anything
done on the grill.
